When I was starting out I also learned a lot from this free PDF made by CholyKnight; she shares a lot of tips and techniques and walks you thru making a simple plush https://cholyknight.com/2022/01/14/starter-pack-plush/
My personal bits of advice are as follows:
I'd recommend starting out making plushies with pre-made patterns; make sure the patterns have written instructions with photos at the start
Use a lot of sewing pins. Trust me. I am serious
Get the feel of whatever fabric you are working with; it's plushies you are very likely ending up with minky; learn how it feels, which direction the fur goes into, learn the texture (it's stretchy and slippery so it gets a bit to get used to)
This is a very very muscle memory-based skill/hobby IMO. Once you sew a certain shape enough times you will learn and it will look better!
Making your own patterns is very difficult and time and resource-consuming; of course, there will be times when you want to branch off into your own projects then pattern drafting and repetition are the key (altho it is a very different beast and it is going to be a very personal thing in how you approach shapes)
Don't worry about tools when starting out; this can get very expensive very fast and if you don't find the motion and the process it could become a money sink hole unfortunately; try with small amounts of fabric and things like painting or safety eyes (tho if you commit to this and want to buy a sewing machine i do recommend that you get one that is both an embroidery unit and an embroidery machine in one go if machine embroidery is something you have interest in)
DON'T GIVE UP!! Take a look at my very first plushie I've ever made and then the remake from one year later!
