Ingredients: 1 packet 2 1/4 tsp active dry yeast. 1/4 cup warm water 110F. 2 cups all-purpose flour. 2 tbsp granulated sugar. 1/2 tsp salt. 1 3/4 cups warm milk. 1/2 cup unsalted butter, melted. 2 large eggs. 1/2 tsp vanilla extract.
Instructions: In a small bowl, combine the warm water and active dry yeast. Let it sit for 5 minutes, or until foamy. In a large mixing bowl, whisk together the flour, sugar, and salt. Pour the warm milk and melted butter into the yeast mixture and stir. Add the yeast mixture, eggs, and vanilla extract to the dry ingredients. Stir until the batter is smooth. Cover the bowl with plastic wrap and refrigerate the waffle batter overnight. The next morning, preheat your waffle iron according to the manufacturer's instructions. Pour an appropriate amount of batter onto the preheated waffle iron and cook until golden brown and crisp. Serve the waffles warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
