Caramelized Onion Carrot Fry Up
The onions, carrots, and rosemary...this smells so good as it’s frying up in your kitchen filling the house with mouth watering scents. It fries up quickly and with little effort or skill on my part - just the way I like to cook.
oil
1 lg. sweet onions, thinly sliced into crescents
2 c. carrots, sliced thinly
1/2 c. veg broth
2 T. balsamic vinegar
1 T. fresh rosemary, leaves only (no stems, please), chopped fine
1/4 t. ground black pepper
In a large fry pan, add oil to onions and carrots sauteing until just tender. Add broth, vinegar, rosemary, and pepper simmering to just reduced. Serve with crunchy greens and a slice of roast pork - great eating.

These have that same great radish zippy taste and crunch but have a surprise in store when you slice them - red inside with a hint of green/white “rind” around the outside edge. They’re large enough to use as dippers when sliced thin or add visual interest in a tossed salad. They give a dash of color and heat/spice diced and thrown in stir fry. Any way you slice it, they’re a fun change of pace way to get your 5 veg/fruit a day in!
