Wondertart recipe
Ingredients (Dough):
2 teaspoons active dry yeast
½ cup lukewarm water
½ teaspoon sugar
1 egg, at room temperature, beaten
¼ cup olive oil
2 to 2 ½ cups unbleached flour, or use half whole-wheat flour, half unbleached
¾ teaspoon salt
Ingredients (Filling):
4 limes
5 sugar cubes
6 strawberries
1 pineapple
4 leaves of mint
Method (Dough):
Dissolve the yeast in the water, add the sugar and allow to sit until the mixture is creamy, about 5 minutes. Beat in the egg and the olive oil.
Combine the flour and the salt and stir into the yeast mixture (you can use a bowl and wooden spoon for this, or a mixer). Do this until a soft dough is generated
Get a baking pan and spread the dough into its bottom and sides, leaving a little bit of dough out of the edges of the baking pan.
Put the baking pan with the dough in a moderately heated oven for 15 minutes, then let it cool.
Method (Filling):
Chop the limes up into 4 quarters, and squeeze them so that the juice drops into a big bowl.
Crush the sugar cubes, and dissolve the sugar into the bowl of lime juice.
Pour the lime juice into a blender.
Chop the strawberries up into 2 halves, and put them in the blender with the lime juice.
Turn on the blender.
Skin and core the pineapple, then chop it up and put the slices into the hole in the blender while it is blending.
Crush the 4 leaves of mint and put the crushed mint into the blender while it is blending.
Once the fruits have completely been mixed and blended, pour it into the tart’s crust and put it back in the moderate oven for 25 minutes.
After you’re done, take the hot and fresh tart out of the oven, slice it and serve it to your guests!
