Smothered chicken is a warm and comforting dish that is great for cold weather. Tender chicken thighs are cooked in a creamy sauce that has herbs and spices that smell great. This makes a hearty and filling meal.
Ingredients: 4 chicken thighs. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 cup chicken broth. 1/2 cup heavy cream. 1 teaspoon dried thyme. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. 1/4 cup grated Parmesan cheese. Chopped fresh parsley for garnish.
Instructions: Season chicken thighs with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken thighs and brown on both sides, about 4 minutes per side. Remove from skillet and set aside. In the same skillet, add chopped onion and garlic. Cook until softened, about 3 minutes. Pour in chicken broth, heavy cream, thyme, paprika, and cayenne pepper. Stir to combine. Return chicken thighs to the skillet. Cover and simmer over medium-low heat for 25 minutes, or until chicken is cooked through. Sprinkle grated Parmesan cheese over the chicken. Let it melt for a minute. Garnish with chopped fresh parsley before serving.
