Vegan stew night. Made with Field Roast apple sage sausage, lentils, kale, tomatoes, sweet potatoes, cranberries, corn, mushrooms, and bunch of herbs.
Field Roast has become my primary meat facsimile along with Quorn because I made a conscious decision to shift away from soy in 2019. I still like to eat tofu and soybeans when eating Japanese food, but I’ve taken it out of my daily meals. Same goes for my dairy substitute: I switched over to pea milk as soon as it was available because I’ve always been a fan of pea protein powder.
Red lentil & bean nachos
I’m going to apologise now because when I create or adapt a recipe, I don’t measure anything. I’ll try my best. Personally I adapt recipes based on taste preferences (so a lot of garlic and not so much spice)
Ingredients:
- 1 can red kidney beans
- 1 can Mexican style tomatoes
- split red lentils
- 1 cup vegetable stock (adjust based on need, can also just add more water)
- minced/finely diced garlic
- diced onion
- chilli powder
- coriander
- cumin
- thyme
- salt & pepper
- lime juice (optional)
1. Heat your pan with a small amount of oil, brown onions then add garlic
2. Add seasonings, tomatoes, beans, lentils, and stock. Stir and leave to simmer, stirring occasionally to prevent sticking. Taste and adjust seasoning amounts as needed
3. Once cooked and tasting as desired, serve on nacho chips with cheese & sour cream
I often have leftover mix which I enjoy having as the next days lunch reheated with sour cream and cheese without chips.
You can smash half of the beans to get a more mince like texture
