Put a full 8hr work day in to get this strawberry Riesling bottled! There was not any significant color extraction from the strawberries which is why I referred to it as strawberry Riesling rather than Rosé. We experimented with new corks this time, and they are looking much more durable than the ones we used in the first few batches. The batch yielded 116 bottles, so there should be plenty to go around! We racked the strawberry Rosé off the fining solids today. After the separation from the solids, the wine had a beautiful, subtle red hue, and the Riesling juice compliments the flavor of the strawberries beautifully. In a few days, we will filter and bottle it! The Benton fining trials yielded a very clear, slightly pink wine! It's still packed with strawberry flavor despite the low level of color.
