This is my Lentil "MeatLoaf". It was baked with a delicious sauce but I didn't like the way the photo came out haha. It was initially a vegan meal but I struggled finding Flax Meal and had an even harder time making it so I just used an egg to hold everything together. The lentils have an interesting, yet yummy taste when combined with all of the other veggies and seasoning! It took my a little while to finish but I'm sure with practice, I'll cut down my prep time! I would also say to double the sauce recipe and use half while baking and the other half to use while eating because it's so yummy and not nearly enough!
