Ingredients: 1 lb boneless, skinless chicken breasts, diced. 8 cups low-sodium chicken broth. 4 medium carrots, peeled and sliced. 3 stalks celery, sliced. 1 medium yellow onion, diced. 3 cloves garlic, minced. 2 bay leaves. 1 tsp dried thyme. 1/2 tsp dried rosemary. Salt and black pepper to taste. 8 oz wide egg noodles. 1/4 cup chopped fresh parsley.
Instructions: In a slow cooker, combine chicken, chicken broth, carrots, celery, onion, garlic, bay leaves, thyme, rosemary, salt, and pepper. Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours, until chicken is cooked through and vegetables are tender. About 30 minutes before serving, add egg noodles to the slow cooker and stir to combine. Cover and cook for an additional 20-30 minutes, or until noodles are tender. Remove bay leaves and discard. Stir in chopped parsley just before serving. Adjust seasoning with salt and pepper if needed. Serve hot and enjoy!
