Instead of regular tacos, these raw vegan tacos are a tasty and healthy option. They have fresh vegetables and avocado on top, and a spicy walnut mixture inside.
Ingredients: 1 head romaine lettuce, leaves separated. 1 cup walnuts. 1 tablespoon chili powder. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. 1/4 teaspoon cayenne pepper. 1/4 teaspoon sea salt. 1 cup cherry tomatoes, chopped. 1/2 cup red bell pepper, chopped. 1/4 cup red onion, chopped. 1/4 cup fresh cilantro, chopped. 1 avocado, sliced. Lime wedges, for serving.
Instructions: Pulse the cumin, smoked paprika, cayenne pepper, walnuts, and sea salt in a food processor until the mixture is crumbly. Put the walnut mixture into the leaves of romaine lettuce. Red bell pepper, red onion, cilantro, and avocado slices should be put on top. Comes with lime wedges.
