Instructions: Preheat smoker to 250F 120C. Rinse Cornish game hens and pat dry with paper towels. Rub the spice mixture all over the Cornish game hens, ensuring they are evenly coated. Place Cornish game hens in the smoker and cook for 2.5 to 3 hours, or until the internal temperature reaches 165F 75C in the thickest part of the meat.
