Now that my forthcoming pickling cookbook is in my editor's hands, I get to focus on... well, still pickles, but those made from my homegrown veg! I'm loving how these asparagus spears and walking onions look in a new fermentation setup coming from @leparfaitworldwide: ChouAmi, or The Little Fermenter. It's a complete plastic-free, stainless steel unit with a waterlock and spring weight. For aspragus and other long veg, like snap beans, I'm using it with a straight-sided terrine jar. Egyption walking onions are coming in nicely. They’re often referred to as walking onions (or tree onions) because they propagate by forming bulblets at their tops that become heavy enough to bend over and plant themselves and “walk” around the garden. A cross between Allium cepa and Allium fistulosum, they’ve become one of our favorite Alliums.
