I promise, this is not spaghetti with pickles and hot dogs! It’s zucchini and herb sausage in lemon sauce, one of my favorite things to eat in the summer. It’s not that pretty, but it’s delicious, whether you’ve got sausage on hand or make it vegetarian.
Sautee onions in olive oil (even caramelize em if you’ve got time!), then add two sliced zucchini and cook them over low heat until they’re falling apart. Add the juice of 1.5 lemons and finish with some pasta water. If you’re using sausage, I think the texture is better if you grill it separately and then slice and add to serve, but it will be delicious even if you don’t have the time / energy / inclination to keep standing in the hot kitchen.
