Swede and cabbage gratin. Tasted nicer than it sounds. First sauté diced swede in butter until golden. Be generous with the butter and give it time, about 40minutes in a pan. Set aside and drain off the butter. Add fresh butter to the pan and add sliced cabbage and cook until starting to soften. Add a generous splash of chicken stock, Himalayan pink salt and fresh black pepper and continue to cook until soft. Layer the swede and cabbage in a dish with sprinkled cheshire cheese and double cream generously between layers Pop in the oven at 220c for 15 minutes until bubbling.
