Vegan pakora frittelle are delicious Indian-style fritters made with chickpea flour and a variety of vegetables. They are crispy on the outside and soft on the inside, packed with flavorful spices.
Ingredients: 2 cups chickpea flour. 1 cup water. 1 small onion, finely chopped. 1 medium potato, grated. 1 cup mixed vegetables such as carrots, peas, and bell peppers, finely chopped. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. 1/2 teaspoon chili powder adjust to taste. Salt to taste. Oil for frying.
Instructions: In a large mixing bowl, combine chickpea flour and water to make a smooth batter. Add chopped onion, grated potato, mixed vegetables, minced garlic, grated ginger, ground cumin, ground coriander, turmeric powder, chili powder, and salt to the batter. Mix well to combine all ingredients. Heat oil in a deep frying pan over medium-high heat. Drop spoonfuls of the batter into the hot oil, shaping them into small fritters. Fry until golden brown and crispy, flipping occasionally for even cooking. Once cooked, remove the pakoras from the oil and drain excess oil on paper towels. Serve hot with your favorite dipping sauce or chutney.
