Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine the mashed sweet potatoes, melted coconut oil, maple syrup, and scraped vanilla bean seeds or vanilla extract. Mix well. In a separate bowl, whisk together the oat flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped pecans or walnuts. Scoop spoonfuls of the cookie dough onto the prepared baking sheet. Flatten and shape each spoonful into a cookie shape. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
