Even those who (wrongly) don't like pumpkin pie deserve a good homemade pie. I've been helping my mom make pies since I could walk and will be happy to provide some good recipes for apple pie closer to Thanksgiving. In the meantime, apple crisp is a great way to get a taste of autumn without having to eat a bunch of leftovers! The recipe scales easily depending on how many apples you have. Double the recipe below to fill a 13x9 dish (or two pie plates). As written it usually only lasts two days between my husband and I. --------- Approximately 5 apples, from a mix of granny smith and McIntosh, and some harder apples like gala or honeycrisp. Granny smith provides the tartness, McIntosh bakes down mushy, and gala/honeycrisp/fuji retain their texture. The key to a good apple pie is a combination of apples that bring different things to the table. 1TBSP AP Flour 1tsp ground cinnamon 1/4 C white sugar 1/4 C water 1 C AP Flour 1/4 tsp baking powder 1/4 tsp baking soda pinch of salt 1/2 C butter, melted 1 C Packed brown sugar 1 C Oats (quick cooking or old fashioned, latter being more toothsome) spices to your liking. I typically do 1 tsp cinnamon, 1 tsp pumpkin spice, and a grating of fresh nutmeg since they're what I have on hand 1. Preheat oven to 350 F 2. Peel and slice the apples into ~1/4 inch slices. toss with the tbsp of flour in a large bowl, then toss with cinnamon and white sugar. Pour into 8x8 square pan or a pie plate. Add water. The more water you add the gooier the consistency. A 1/4 cup is relatively dry, and I make it often without the water too. 3. In a small bowl, whisk the remaining flower with the baking powder and soda and pinch of salt. 4. In a medium bowl stir together the butter and brown sugar until slightly fluffy or well combined. Add flour mixture and oats and stir until just combined. Crumble the mixture haphazardly over the apples. I start with a fine crumble then add large chunks once the apples are covered. 5. Bake until apples are cooked through, about 45 minutes 6. Serve warm a la mode, or cool completely and chill to let the filling set. I really like the crumble topping, so there is a lot here! Good pies and crumbles rely a lot on experience and your personal preference, so (literally) trust your gut! Happy baking, Tumblr Pie Expert ;)
