Trying out my pickled watermelon rinds (made from the gigantic half watermelon I was gifted). This is my first time making them, but I’ve wanted to for quite a while.
My thoughts are I really like the taste, but they’re still really hard. I expected them to be crunchy but they’re almost hard enough to trigger my tmj!
I wonder if I didn’t cut them thin enough, and/or if letting them brine longer would soften them… I’m still new to pickling so if you have any advice it’s welcome! Also here’s the recipe. I didn’t have any jalapeños or black peppercorns so I just added like a 1/8 tsp of Aleppo chili flakes and five cloves to each jar.
