Ingredients: 1 cup creamy peanut butter. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 2 teaspoons vanilla extract. 2 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 1/2 cups chocolate chips. 1/2 cup chopped roasted peanuts. 1/4 cup mini chocolate chips for topping.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined. Fold in the chocolate chips and chopped peanuts. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets. Gently flatten each cookie with a fork, making a crisscross pattern. Sprinkle a few mini chocolate chips on top of each cookie for extra chocolatey goodness. Bake in the preheated oven for 10-12 minutes, or until the cookies are golden around the edges. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
