Hello! Sorry if that has been asked before. Do you know what the different names that Grim calls Yuu are? I noticed that after Book 6 he calls us something different than what he usually uses. I don’t know what it means though

Grim refers to the prefect as 子分 (kobun, for minion) before, during, and after Book 6!
EN will sometimes add the prefect's name to Grim's dialogue in places where he is not actually saying it! Is that maybe what made it sound as though he started using another word somewhere? :>
On EN I suspect that Grim is supposed to use "hench-human" specifically with the prefect and "minion" when referring to other people?
EN-Grim will also use "minion" with the prefect (and also "henchman"), but maybe this is a continuity error? It can be difficult to tell the difference between mistakes and intentional changes on EN💦
The original game is consistent, using only the word 子分 (kobun).
You may notice in the video above that Grim isn't actually saying "kobun" in subtitles very often, only in the audio, and this is (usually) the same on JP!
In the same way that the other characters will say the prefect's name in subtitles but say 監督生 (kantokusei, prefect) in the audio, that is the clever way that the game is getting around the players all having different names, but the characters still needing to refer to them by name in dialogue :>

I'd like to know Grim's story! What's his past? Does he have any connection to Yuu? Or any connection to Disney? Do we have any theories about him? Oh, Yuurei, please tell me!

There is much we do not know about Grim, and just as much that he does not know about himself!
Grim says that he does not remember his family and he doesn't seem to know where he came from or how it is that he arrived at NRC, reacting with surprise at how remote the island is, which asks how he got there (and from where).
He is also constantly surprising the other characters with how little he knows about Twisted Wonderland itself, being unfamiliar with basic information like major holidays, major historical figures, popular sports, blot, many foods, and even the Great Seven.
Lilia: "How could someone in this world have truly never heard of Halloween?"
Grim remembers wearing his ribbon and being called "Grim the digger" back home, but there have been no clues about what that "home" is or was.
“I remember wakin’ up hungry and alone. It was real cold. I was waitin’ out there for someone to come get me for ages. What happened after that again? It’s all so foggy…”
Grim also remembers being hungry, cold and alone, and we have heard about creatures who are hungry, cold and alone before--Tartarus' phantoms 👀
Other curiosities are: 1. STYX is unable to fully analyze Grim because of a curse/blessing he is under 2. STYX is fairly certain he is a direbeast combined with another, unknown animal 3. There are creatures known to disguise themselves as direbeasts to escape detection: phantoms 👀
Idia explains that Grim's blot accumulation is impossible for STYX to determine:
"Grim's numbers go haywire every time I try to get a precise blot accumulation reading. One moment they spike into the red zone....like a subject that's gone full Phantom."
And there is at least one theory that ties in to how we technically do not know how it is that original-Ortho died: he was killed by an escapee from Tartarus, but Idia says that, when he woke up, "Ortho was gone."
And at least one of the phantoms we see wake up Tartarus demands to be fed flesh. Was original-Ortho eaten by a phantom? And was that phantom Grim?
We do not know 🐱
As for Disney connections, the same theory above guesses that Grim was possibly based on Dinah from Alice in Wonderland, with the escaped phantom that killed Ortho potentially being from the Alice-in-Wonderland-inspired Queendom of Roses.
And then the oft-repeated theory that Grim in his phantom form, confronting the characters in a destroyed Mirror Chamber, was one of the first things the game showed us 👀
But still all conjecture at this time!

Grim Theory
When child-Idia sees “Subject ROS-3367A,” the creature that he accidentally releases when he shuts down STYX's security, he doesn’t call it a phantom.
He calls it a monster.
When asked about his family Grim responds, "I remember wakin' up hungry and alone. It was real cold. I was waitin' out there for someone to come get me for ages. What happened after that again? It's all so foggy..."
There is also a theory that the chimera in the opening scene of the game is an Overblotted Grim.

And going back to the theory that the "ROS" from "ROS-3367A" comes from "Queendom of Roses" and Grim was based on Dinah from Alice in Wonderland...
And the game may be hinting that Grim killed Ortho.
Grim Info Compilation part 6: Grim and the Prefect
Our first impression of Grim is his attempts to steal clothes from one of the sleeping students-to-be of Night Raven College.
He chases the prefect throughout the school demanding their clothing, until he is captured by Crowley.
He insists on taking the prefect’s place at the school as he can use magic. He is ejected from campus only to immediately return.
When asked if he believes himself to be the owner and the prefect to be the pet he responds, ‘of course,” which also comes up in Glorious Masquerade.
Upon realizing that the prefect has the ability to free him from his contract with Azul in Book 3 Grim says, “for the first time, I think I’m ready to recognize you as our prefect.”
Grim insists on sitting next to the prefect during Glorious Masquerade because “someone’s gotta look after ‘em,” and becomes distressed when it appears that the prefect may be harmed by the fire lotuses later on.
Grim will sometimes elude to playing games and watching movies with the prefect, saying more than once that he wants them to hurry back to the dorm to spend time together.
Grim is proud of how good the prefect looks in their outfit for Firelit Sky ( “That’s MY hench-human, after all”), asking them to buy him a toy from the marketplace.
The prefect’s participation in the exhibition match at the end of Book 2 is cut short by Grim striking them in the head with a Spelldrive disc.(While in-game Grim does not seem particularly concerned, novel-Grim is apologetic.)
Grim has a voice line of, “Spendin’ time with you ain’t half bad. So, uh…stick around, okay?”, and Grim’s jealousy of the prefect’s fondness for Stitch is a running theme in the “Lost in the Book with Stich” event.
Grim seems to greatly regret attacking the prefect at the end of Book 5, apologizing repeatedly once he has been saved.
