I do not know about you, but I am not super excited about this year thanksgiving, but I am so grateful for everything. Anyway, if you are cooking a turkey for the first time these are quick tip that may help you get a delicious, moist turkey with a brown and crispy skin. Tips for cooking turkey - 1 day of defrosting time for every 5 pounds - Feel free to brine your turkey in seasoned cold water for a day or two if you have time. - Uncover the turkey in the fridge for the last 8-10 hours before cooking. This helps dry out the skin in order to get a beautifully browned, extra-crispy skin once roasted - When possible gently detach part of the skin from the meat and season under the meat under the skin. With your fingers poke the breast meat part to insert your rubs mixture in. - Rub the skin with generous amount of your favorite fat (I use butter) for yummy brown skin. - To allow even cooking do not overstuff your turkey. Fill it loosely. I personally use only aromatics like fresh thyme, garlic, herbs, …. - Cover loosely the bird with foil during first half part of cooking then remove to allow the skin to golden. - Cook the turkey breast-side down to protect the breast from the heat and all juices to fall down towards the breast for a moist breast meat. - For browning the breast ‘skin, you’ll need to flip the turkey over in the pan in order to brown it in the last few minutes of cooking (about 30 mins depending on the size) - Resist the urge of constantly opening the oven. Go relax - Multiply the weight of your turkey by 13 minutes per pound to know the cooking time of an empty bird. Eg: 14-pound turkey would take 182 minutes, or 3 hours 2 minutes to cook. - Preheat the oven to 400°F then drop the temperature to 325°F after putting the turkey into the oven - Remove your turkey from the oven when the thickest part of the breast reads about 165F - Before carving, let your turkey rest for at least 30 minutes.
