Savor the tastes of the tropics with this warm, honey-drizzled pineapple carpaccio. It's a delightfully tasty and nourishing Paleo dessert or snack.
Ingredients: 1 ripe pineapple. 2 tablespoons raw honey. 1/4 cup shredded coconut. 1/4 cup macadamia nuts, crushed. Fresh mint leaves for garnish.
Instructions: Start by peeling the pineapple and removing the core. Slice the pineapple thinly, creating carpaccio-style rounds. In a non-stick skillet over low heat, warm the raw honey until it becomes liquid. Carefully drizzle the warm honey over the pineapple slices. Sprinkle shredded coconut and crushed macadamia nuts evenly on top of the pineapple. Place the skillet under a broiler for 1-2 minutes, or until the coconut starts to turn golden brown. Remove from the oven and let it cool slightly. Garnish with fresh mint leaves for a burst of freshness. Serve warm and enjoy!
