Fave soups in no particular order:
Trahanas
This is a wheat product we use a lot in my country. You can make other things with it but the most common way to cook it is soup. Many people like it thick, almost like porridge, but I prefer it more liquidy. I often use it when making chicken soup instead of rice. It's very much a winter soup, very warm. Recipe in English here.
Tom Yum
I spent several months in Thailand and used to eat it often for lunch. I used to have tom yum kung (with prawns) or tom yum gai (chicken). I love tom khai too, but tom yum is my fave.
Tomato soup
I discovered this when I lived in the UK, it's not something we typically cook in my country. I love tomato and I love soups: how could I not enjoy it? When I cook it now, I often add a handful of trahanas (see above).
Lentil soup
A staple in my country and a soup I love. We eat lentils a lot here; all sorts of legumes really. It's one of the soups that tastes better the next day. Recipe here.
Petoura
This is a dish my grandmother made. What my grandparents' village called petoura is a sort of egg-pasta thing called hylopites that is used throughout the country, though not in soups. My gran used to make the petoura herself and then she'd cook them as a soup with a splash of milk, butter, and feta cheese. All products found in a shepherd's household like hers. Very cucina povera like the Italians say. This is my favourite comfort soup. It's easy to make, very fast to cook, and it warms me right up.
