Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 teaspoons baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground nutmeg. 1/2 cup whole milk. 2 large eggs. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. Vegetable oil for frying. 1/2 cup powdered sugar for coating.
Instructions: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground nutmeg. In a separate bowl, combine the whole milk, eggs, melted butter, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the dough should be sticky. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes to firm it up. On a floured surface, roll out the dough to about 1/2-inch thickness. Use a donut cutter or a round cookie cutter to cut out doughnuts. Make a hole in the center of each doughnut. Heat vegetable oil in a deep frying pan to 350F 175C. Carefully place the doughnuts in the hot oil using a slotted spoon. Fry for about 2 minutes on each side or until golden brown. Remove the fried doughnuts and drain them on a paper towel-lined plate to remove excess oil. While still warm, toss the doughnuts in powdered sugar to coat them evenly.
