Ingredients: 2 tablespoons olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 2 tomatoes, diced. 2 green peppers, diced. 4 eggs. Salt and pepper to taste. 1 teaspoon red pepper flakes optional. Feta cheese optional, for garnish. Fresh parsley, chopped optional, for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add chopped onions and saut until they become translucent, about 3-4 minutes. Add minced garlic and saut for another minute until fragrant. Stir in diced tomatoes and green peppers, and cook for 5-7 minutes until they soften and release their juices. If you like it spicy, add red pepper flakes for some heat. Create four wells in the tomato-pepper mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set, and the yolks are still slightly runny. Season with salt and pepper to taste. Garnish with crumbled feta cheese and chopped fresh parsley if desired. Serve hot directly from the skillet.
