Paleo-style tacos that are a classic favorite, served on jicama shells. The seasoned meat and fresh toppings combine to create a tasty and nutritious dish that is enhanced by the crisp texture of the jicama shells.
Ingredients: 1 lb ground beef or ground turkey. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 1 small jicama, peeled and thinly sliced into rounds. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup fresh cilantro, chopped. 1/2 avocado, sliced. Juice of 1 lime. Paleo-friendly hot sauce optional.
Instructions: Using a spoon, break up the ground beef or turkey as it cooks until it is browned and cooked through in a skillet over medium heat. Place the minced garlic and chopped onion in the skillet and cook over medium heat until the onion turns transparent. Add the paprika, cumin, chili powder, salt, and pepper and stir. Simmer for a further two to three minutes to let the flavors combine. Take off the heat. Slice the jicama into thin rounds with a mandolin or sharp knife to prepare the jicama shells. These are going to be your taco shells. Place a dollop of the spiced meat mixture onto each jicama shell to assemble your little tacos. Add a slice of avocado, diced tomatoes, red onion, chopped cilantro, and shredded lettuce to the top of each taco. For an extra zesty kick, squeeze some fresh lime juice over the top.
