I find I often listen to songs just to hear a particular part of it, even when the rest seems to drag on. Sometimes 'that one part' is short, sometimes it's long, but whatever the case it always leaves me wanting more. The example that first comes to mind would be what I currently use as my ringtone, that is Yusef Lateef's "Love Theme from The Robe" (at about 2:06), when the piano really kicks in for its solo half-way through the song. I think it's the change in key that does it for me, it just makes that part stand out so much. Another personal example of 'that one part' that happens to have a change in key can be heard during Dave Brubeck's intro in "Strange Meadow Lark" (at 0:53 in this video). Come to think of it, pretty much all of the songs in Brubeck's "Time Out" album have at least one tidbit, flourish, solo or otherwise that makes me come back for more. Or maybe I'm just a sucker for nifty piano playing.
