This turkey posole is hearty and tasty. It has hominy, tomatoes, green chilies, and tender shredded turkey in a savory broth. This is a great meal for when it's cold outside.
Ingredients: 2 lbs turkey breast, cooked and shredded. 2 cans 30 oz each hominy, drained and rinsed. 1 onion, finely chopped. 4 cloves garlic, minced. 2 cans 14 oz each diced tomatoes. 1 can 4 oz diced green chilies. 1 teaspoon dried oregano. 1 teaspoon ground cumin. 1 teaspoon chili powder. 6 cups turkey or chicken broth. Salt and pepper to taste. Fresh cilantro, chopped, for garnish. Lime wedges, for serving.
Instructions: In a large pot, saut the chopped onion and minced garlic until softened. Add the shredded turkey to the pot and cook for 2-3 minutes, allowing it to brown slightly. Stir in the hominy, diced tomatoes, diced green chilies, oregano, cumin, and chili powder. Pour in the turkey or chicken broth, and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 30-40 minutes to allow flavors to meld. Season with salt and pepper to taste. Serve the posole hot, garnished with fresh cilantro, and accompanied by lime wedges.
