Spiced with cumin and chili powder, the earthy portobello mushrooms and soft zucchini make a tasty filling that is great for stuffing into soft taco tortillas. Add lettuce, tomatoes, cheese, and sour cream, along with any other taco toppings you like, for a tasty meal.
Ingredients: 4 large portobello mushrooms, sliced. 2 medium zucchinis, sliced. 1 red onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon cumin powder. 1 teaspoon chili powder. Salt and pepper to taste. 8 small taco tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup grated cheese optional. Sour cream and salsa for serving.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sliced red onion. Saut until onion is translucent. Add sliced portobello mushrooms and zucchini to the skillet. Cook until they start to brown, about 5-7 minutes. Sprinkle cumin powder, chili powder, salt, and pepper over the vegetables. Stir to coat evenly. Cook for an additional 2-3 minutes. Warm the taco tortillas in a separate skillet or microwave. To assemble tacos, place a spoonful of the mushroom and zucchini mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and grated cheese if desired.
