Ingredients: 2 cups coconut milk. 1/2 cup sunflower seed butter. 1/3 cup maple syrup. 1/4 cup cocoa powder. 1 tsp vanilla extract. 1/4 tsp salt. 1/2 cup dairy-free chocolate chips. 1/4 cup coconut oil.
Instructions: In a blender, combine coconut milk, sunflower seed butter, maple syrup, cocoa powder, vanilla extract, and salt until smooth. Pour the mixture into ice cream molds and freeze for at least 4 hours, or until solid. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals until smooth. Remove ice cream bars from molds and dip each into the melted chocolate mixture until fully coated.
