What does a fresh, truly raw cacao bean look like? I don't think Google images offer what I'm about to show you. While I was shooting the Sweetduet Chocolate packaging, I encountered fresh cacao pods for the first time! Even as a bean-to-bar chocolate maker, you rarely get to encounter this sacred fruit in the fresh (and flesh). I was truly mesmerized by its complexity. The flesh surrounding the bean is similar to that of lychee. Beyond that layer, is a thin sinew-like layer that keeps densely packed components of the bean together. Cut it this way or that, every angle looks different. To me, the inside of the bean resembles a walnut or a brain. What does it remind you of?
