Ingredients: 1 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 3/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1 quart vanilla ice cream, slightly softened.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. Mix the flour, baking powder, and salt together in a small bowl with a whisk. Butter and sugar should be mixed together in a large bowl until they are light and fluffy. Add the egg and vanilla extract and mix them in well. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Make a rectangle shape out of each half of the dough. Put it in the fridge for 30 minutes after wrapping it in plastic wrap. Once the dough is cool, place each rectangle between two pieces of parchment paper and roll it out until it is about 1/4-inch thick. Cut out shapes with a cookie cutter and put them on the baking sheet that has been prepared. For 10 to 12 minutes, or until the edges are just beginning to turn golden. Take it out of the oven and put it on a wire rack to cool down completely. Once the cookies are cool, put a scoop of vanilla ice cream that has been slightly softened between two of them and gently press them together to make a sandwich. Before you serve, wrap each sandwich in plastic wrap and freeze it for at least two hours.
