My dad has been holding onto rice paper wrappers and noodles for awhile now waiting to make spring/ summer/ fresh rolls so I decided to go ahead and make them for him today. (Hopefully he doesn’t see this post before he gets home 😂). I pressed, seasoned, and air fried some tofu for 15 min then rolled up cucumber, carrot, cilantro, green onion, rice noodles, and the tofu. This was my third time making these rolls and I’m finally satisfied with my rolling skills. I also made a peanut sauce for dipping, but unfortunately I didn’t have any hoisin sauce to make the traditional peanut dip. I improvised and added sesame oil, garlic, soy sauce, and sriracha to some peanut butter and then added hot water until I reached the right consistency. These were really delicious and I’m very excited to share them.
