Late summer always brings a burst of colour and a glut of produce. But the one rewarding things is making Roasted Tomato Passata which will last through the winter and spring. Such a delicious outcome that all you need to do is heat and serve. Slice Onions and place in bottom of a roasting tray. Sprinkle freshly picked Thyme. Cut mix of Tomatoes, face up. Salt and drizzle with a goo slug of Olive Oil. Roast 180c for 40mins. Moule.
