Even a diehard carnivore will love Barley Risotto Stuffed Portobello Mushrooms!  No meat, but a meaty, hearty texture and flavor!

Today’s recipe: Halloumi and mushroom stuffed chicken Slice the mushrooms and fry lightly in a little butter. Finish with a splash of red wine, add salt and pepper and keep aside. Butterfly the chicken breasts and coat the inside part with a little olive oil and your favourite herbs. Place under the grill until the chicken just begins to turn white. Remove, lay the halloumi and mushrooms, and close. Coat the top with your favourite mustard, then breadcrumbs, spray with olive oil and return to the grill until golden. Easy and different. Enjoy with a nice salad🙂 . .
