This grilled blue cheese and bacon stuffed onion side dish is tasty and hearty, and it's great for any BBQ or outdoor party. Smoky bacon, smooth blue cheese, and sweet grilled onions go so well together that it's impossible to say no.
Ingredients: 4 large onions. 4 slices of bacon, cooked and crumbled. 1/2 cup blue cheese, crumbled. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Set your grill to medium-high heat, which is about 375F 190C. Take the onions' tops off and peel them, but don't cut off the root end. To make each onion stand up straight, cut a small slice off the bottom of each one. Carefully cut out the middle of each onion with a paring knife and a spoon, leaving about two to three layers of onion whole. Save the onion that you scooped out for another time. Break up the bacon and add it to a bowl. Add blue cheese and a pinch of salt and pepper. Fill up each onion that has been hollowed out with this mixture, making sure it fits tightly. Sprinkle a little more salt and pepper on top of each stuffed onion after adding the olive oil. Making sure the foil seals all the way around, wrap each stuffed onion in it. Close the grill lid and put the onions wrapped in foil on it. Put it on the grill for 25 to 30 minutes, or until the onions are soft and the filling is hot and bubbly. Use tongs to carefully take the onions wrapped in foil off the grill. They will be hot. While they are still hot, serve the Grilled Blue Cheese and Bacon Stuffed Onions. If you want, you can sprinkle them with chopped parsley or green onions.
