These gluten-free whole grain streusel bars taste like pumpkin pie, which is a comforting treat. These pumpkin treats are great for fall parties or any time you want a tasty treat!
Ingredients: 1 1/2 cups gluten-free rolled oats. 1 cup almond flour. 1/2 cup coconut sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground ginger. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1/2 cup cold butter, cubed. 1 15 oz can pumpkin puree. 2 eggs. 1/2 cup maple syrup. 1 teaspoon vanilla extract. 1/2 cup coconut cream. 1/4 cup chopped pecans optional.
Instructions: Preheat the oven to 350F 175C. Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal. In a mixing bowl, combine rolled oats, almond flour, coconut sugar, cinnamon, ginger, nutmeg, and salt. Add cubed butter to the dry ingredients and using a pastry cutter or your hands, mix until it resembles coarse crumbs. Press about two-thirds of the mixture into the bottom of the prepared baking dish to form the crust. In another bowl, whisk together pumpkin puree, eggs, maple syrup, vanilla extract, and coconut cream until smooth. Pour the pumpkin mixture over the crust and spread it evenly. Sprinkle the remaining oat mixture over the pumpkin layer. If using, sprinkle chopped pecans over the streusel topping. Bake in the preheated oven for 35-40 minutes or until the edges are golden brown and the center is set. Allow the bars to cool completely in the pan before slicing into squares. Serve and enjoy!
