Ingredients: 1 medium purple cauliflower, chopped. 2 medium sweet potatoes, peeled and diced. 3 cloves garlic, minced. 2 large carrots, sliced. 1 onion, chopped. 4 cups vegetable broth. 1 cup coconut milk. 2 tablespoons olive oil. 1 teaspoon cumin. 1/2 teaspoon turmeric. Salt and pepper to taste.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Saut the garlic and onions until they smell good. Carrots, cauliflower, and sweet potatoes should be added. Bring it to a boil. Add the turmeric, salt, and pepper and mix them in. Add the vegetable broth and bring it to a boil. Then lower the heat and let it simmer for a while until the vegetables are soft. Pour the soup into a blender and blend it until it is smooth. Add the coconut milk and stir it in. Simmer for five more minutes. Make the seasonings taste better. Serve hot, and if you want, top with fresh herbs.
