Dundurn Recipe Challenge - Strawberry Ice
Dundurn Castle is a historic stately home in Hamilton, Ontario which has started a Dundurn Recipe Challenge. A new historic recipe will be posted on Facebook and Instagram every second Tuesday of each month for those willing to meet the challenge!
The Strawberry Ice recipe is from “Miss Leslie’s Lady’s New Receipt-book published in Philadelphia in 1850.
Ripe strawberries are put into a linen bag, and the juice squeezed out. The juice is mixed with a half pound of loaf-sugar to one pint of juice, put into a freezer and frozen. It should come out something like a slushie.
My execution turned into a recipe fail as I tried to follow the original recipe but a total win for what I ended up creating. I must have bought the least juicy strawberries available and could barely squeeze out more than a tablespoon or so of juice, not providing me with enough juice to make the recipe.
Instead I went full twenty first century with what I had and tossed a few tablespoons of sugar and the strawberries into my food processor, added a tablespoon of vodka to prevent crystallization when frozen and blended away.
The mixture went into the freezer creating a delectable fresh tasting Strawberry Ice.
Not everything works out perfectly when cooking but hopefully recipes can be adapted and saved.
