Geordie land and the north-east has a unique cuisine. There’s the charmingly named Pan Haggerty, a buttery gratin of fried onions, potatoes and cheese. Parmo is a late night meaty fast-food originating from Middlesborough. Then there’s the Stottie, a bap, humble in appearance yet to many North-eastern denizens, a symbol of pride. It’s my favourite, a voluptuous flat-ish bread used for mopping up everything from ham and pease pudding to egg and bacon. In the past, heavy industry workers, the shipyarders and minors, would have “stottie fadges’ (there is debate as to whether the fadge is different to the stottie) for packed lunch. It remains much-loved. When Cheryl Cole had malaria, it was reported her Mum Jean brought her a stottie to cheer her.
