For starters, camembert:

Soft, creamy, gooey, smelly, serve on fresh baguette or sourdough, baked with rosemary and garlic, pairs well with chardonnay

Soft but firm, washed in beer, sharp smell but mild and rich taste, once rated as the world’s stinkiest cheese, pairs well with beer or champagne

Soft and gooey again, strong and meaty with a smooth aftertaste, washed in perry made with stinking bishop pears which gave the cheese its name, pairs well with the same perry, or with prosecco

Epoisses de bourgogne:

Strong stink! Washed with brandy which gives it its delicate flavour and strong smell, serve with acidic fruits and nuts, pairs well with chablis

Pálpusztai:

Runny, stinky, has a high ammonia content which can be overpowering so it’s not as high up on my list of favourites, pairs well with ale
