Carne Asada Udon Noodle Salad is a fusion dish that combines the flavors of traditional Carne Asada with the freshness of an Asian-inspired noodle salad. Tender slices of grilled steak are paired with chewy udon noodles, juicy cherry tomatoes, crunchy peanuts, and a zesty soy-lime dressing.
Ingredients: 1 lb carne asada steak, thinly sliced. 8 oz udon noodles. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup cilantro, chopped. 1/4 cup green onions, chopped. 1/4 cup peanuts, chopped. 1/4 cup soy sauce. 2 tablespoons lime juice. 2 tablespoons sesame oil. 1 tablespoon honey. 1 teaspoon chili flakes. Salt and pepper to taste.
Instructions: Following the directions on the package, cook the udon noodles. After cooking, rinse them under cold water and set them aside. Add chili flakes, salt, and pepper to the carne asada. Grill or sear in a pan until done the way you like it. After a few minutes, let it rest and then cut it into thin slices. Sliced carne asada, cherry tomatoes, red onion, cilantro, green onions, and peanuts should all be put in a large bowl together. To make the dressing, mix the honey, soy sauce, lime juice, and sesame oil in a small bowl with a whisk. Add the dressing to the noodles and toss everything together until it's well covered. You can serve it right away or put it in the fridge for a few hours so the flavors can blend. If you want, you can add more cilantro, green onions, and peanuts as a garnish before serving.
