My take on Chick-fil-A! I soaked the the chicken in pickle juice overnight, and used pork rinds for the breading. We ate them on end pieces of Sola bread and they were sooooo good!
Breakfast for lunch
We bought a ton of veggies this week so I roasted a pan full last night with our chicken parmesan and another pan tonight with our coconut shrimp. I made the parmesan breading and coconut breading with Sola bread. I toasted the bread and then threw it in the food processor to make the bread crumbs.
In my last post I mentioned I may not want to continue keto any longer. Honestly, I haven't been very hungry lately, which I suppose is a good thing. I used to wonder how people are able to do OMAD, but I could see it being a possibility. Right now I'm trying to flip the script. My plan is to stay low carb, but only eat one big meal each day. I'm going to stick with a piece of low carb Sola bread for breakfast, a big (mostly low carb) lunch, and then healthy snacks instead of dinner. Maybe a small dessert here and there. I already know that I overeat, so I'm running with this "not much of an appetite" feeling I've had lately. π€

My favorite Thanksgiving dish is my grandma's cornbread dressing. She passed away when I was 14, but I continue her tradition by making it every year. It's probably my favorite food ever. This year we're celebrating with my husband's family and they do the more traditional stuffing, so I made this just for us. I used Sola bread in place of the bread pieces so it's a little lower carb than usual!
