It's an Albariño afternoon here in Jerome, as I sit on my mountain drinking the 2016 Pazo Pondal from RÃas Baixas. I acquired this wine from a #snoothmedia Albariño tasting a while back and I'm finally getting around to enjoying this take on one of my favorite Spanish Varietals under the light of a foreign sun. This fellow was biodynamically farmed; at some point I need to talk about that process... but not today. Today, like every Monesday in Quarantine, I'm going to relax. In some ways, this wine reminds me of a Malborough Sauvignon Blanc on the nose, with the strong undercurrent of blackcurrant bud, intermingling with lemongrass, flint, seasalt, pear, and honeydew melon. These flavors continue on the palate, with the addition of Fuji apple, lemon-lime, and just a touch of wildflower honey. It's a satisfying and refreshing wine for a warm day, with that lighter-bodied character and crisp acidity. Suggested Music Pairings: "Kaer Morhen", Witcher III Wild Hunt soundtrack, or "We Are What You Say," by Sufjan Stevens Suggested Food Pairing: All of the Ceviche.
