4.18.17 Vegetarian Bowl! (68/100 days of productivity)
So, I did nothing all day (but we won’t talk about it). When I got up this afternoon I decided to finally use my new bowl (from Target). Recently I discovered that if I go without eating dining hall food for a long period of time, returning to it upsets my stomach. So, I’ve been trying to avoid going to the dining hall. Over the weekend I went to Target and Whole Foods and got some things that would be easy to put together with just a microwave as a cooking option.
I got black beans, basmati rice, morning star farms crumbles, and romaine hearts. (The bag of chopped veggies were leftovers from Easter dinner. The bag contained green and yellow peppers, mushrooms, onions, and tomatoes) I made the rice, black beans, and crumbles in my microwave. I started the bowl with a bed of lettuce and then put all of my foods on top. It’s a cheap and easy dish, and I have plenty of the ingredients left over to make more, or make variations, for the next few weeks :)
I do have a lot of studying to do tonight, but this was my productive activity for today.
