simple tuppkaka <3
ingredients: for one cake made in a circular tin measuring approx. 25 cm / 10 inches across
75 g / 0.3 cup - butter
3 dl / 1.25 cups - sugar
2 eggs
2.5 dl / 1 cup - flour
1.5 dl / 0.6 cup - fresh red currants (but any kind of berry will do)
a bit of almond flakes
+ a bit of butter and breadcrumbs to line the pan
1. set the oven to 200 C° / 392 F° (normal setting, for hot air temp. needs adjusting)
2. melt the butter on the stove, when melted remove from heat. stir in the sugar and eggs.
3. stir in the flour, and stir so the batter is smooth
4. pour in oven-safe, lined, pan. spread the berries evenly on top, and spread almond flakes on top of these. (i gently press the berries down in the batter, but that's a personal preference)
5. bake low in the oven for 20-25 minutes
notes: i'm not very exakt on the measurements when i bake it, so don't worry about measuring perfectly. the cake is slightly gooey and sweet, and pairs well with currants (which are slightly sour berries). tuppkaka means rooster-cake <3
