Ingredients: 2 lbs pork tenderloin. 12 slices bacon. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and black pepper to taste.

Roll the bacon up around the pork, making sure it is tightly wrapped. In a skillet that can go in the oven, heat the olive oil over medium-high heat. The pork tenderloin wrapped in bacon should be seared on all sides until the bacon turns golden brown. Place the skillet in an oven that has already been heated and roast the pork for 20 to 25 minutes, or until it reaches 145F 63C inside. Take it out of the oven and let it cool down for a few minutes before cutting it. Make medallions out of the pork tenderloin that has been wrapped in bacon and serve.
