This Frittata with Red Onion Relish is a savory and satisfying egg dish that combines the richness of eggs with the sweet and tangy flavors of red onion relish. Perfect for a brunch or breakfast gathering with friends and family.
Ingredients: 6 large eggs. 1/4 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 tablespoons olive oil. 1 small red onion, thinly sliced. 1 red bell pepper, diced. 1 cup spinach leaves. 1/2 cup grated Parmesan cheese. 1/4 cup fresh parsley, chopped.
Instructions: Preheat your oven to 350F 175C. In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside. Heat olive oil in an ovenproof skillet over medium heat. Add the sliced red onion and cook for 3-4 minutes until softened and slightly caramelized. Add the diced red bell pepper to the skillet and saut for another 2 minutes until it starts to soften. Stir in the spinach leaves and cook for an additional 1-2 minutes until wilted. Pour the egg mixture into the skillet over the sauted vegetables. Sprinkle the grated Parmesan cheese evenly over the top. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the top is golden brown. Remove the frittata from the oven and let it cool for a few minutes. Sprinkle chopped fresh parsley over the top as a garnish. Slice and serve the frittata with red onion relish on the side.
