day 52 of 100daysians: rougan (dried pork) the one snack i’d eat the rest of my life.  this sweet and savory preserved meat is prepared with spices, sugar, salt and soy sauce and then dried.  this was food for the poor who preserved the little meat they had, but is now a chinese new year delicacy. it’s sold in large squares that we would cut into smaller bite-sized squares to help with “portion control”. but not really.
