This parfait is a delicious take on Mom's Old Fashioned Rice Pudding. It has layers of creamy rice pudding, whipped cream, and nuts, making it a truly divine dessert.
Ingredients: 2 cups cooked white rice. 4 cups whole milk. 1 cup granulated sugar. 1/2 teaspoon salt. 2 teaspoons vanilla extract. 1/2 cup raisins. Ground cinnamon for garnish. Whipped cream optional. Chopped nuts optional.
Instructions: Put cooked rice, milk, sugar, and salt in a saucepan. Stir the mixture often while cooking over medium heat for about 20 to 25 minutes, or until it gets thick. Take the pan off the heat and add the vanilla extract and raisins. Wait until the pudding is cool enough to touch. If you want, you can serve the rice pudding in bowls or glasses and top them with whipped cream and chopped nuts. Do this again and again until the glasses are full.
